Fill soup pot with 2 cups of chicken broth and add 2-3 cups of water, bring it to boil.
Peel potatoes, carrots and onion. Cut potatoes to medium square pieces. Shred carrots, and dice onion into a small pieces.
Cut chicken breast into a small pieces and put it with some oil to the frying pan, season with salt and pepper and powdered garlic. Let it sauté there covered with lid until almost done.
Chop Celery sticks to the small pieces and put to the pot with boiling broth.
Cut garlic clove in half and put it to the broth. Remove it when soup is ready to be served.
Add chopped potatoes to the broth and cooked chicken breast from skillet.
Heat butter in the frying pan than add diced onions and shredded carrots. Let them become caramelized. Than put them to the soup pot.
Cauliflower rice should be added when everything is boiling in the soup pot. Let it boil together for 10 min on medium heat.
Turn off the heat and add fresh chopped parsley.
